CONTRAST OF WHITE VERMENTINO - IGP TERRE SICILIANE
The family vineyards extend in the gentle hilly landscape between the provinces of Trapani and Palermo in the center of the Gulf of Castellammare.

North-western Sicily in the Bosco Falconeria district in the center of the Gulf of Castellammare which boasts pedo-climatic conditions particularly favorable to the cultivation of vineyards.
Vineyard
Espalier training with guyot pruning, a density of 4500 plants per hectare and a yield of 3kg per plant. The vineyards have an average age of 15 years and are located at an altitude of 200m above sea level.
Grape harvest
The manual harvest of the grapes takes place between the first and second ten days of September, depending on the climatic trend.
Vinification and Aging
The grapes are gently pressed and vinified in white without any particular technical precautions so as not to alter the real qualitative potential and territorial expressions. Fermentation takes place for about 10 days at a controlled temperature of about 15°C in acacia barriques and in these followed aging for six months where the wine remains on its lees. Aging continues in the bottle for six months before being marketed.

Vinification and Aging
Fermentation takes place in steel with maceration on the skins for 8-10 days at a controlled temperature of about 22-25°C. This is followed by aging in 25hl wooden barrels for at least 24 months and then in the bottle for 12 months before being marketed.
